Fraîcheur des arômes : petits fruits rouges, framboise ou bonbon acidulé. </span><br /><span style="color:#000066;"><br />Comment fabrique-t-on un vin rosé?<br /></span><br /><span style="color:#000066;"></span><br /><span style="color:#000066;">1. le mélange d'un vin blanc et d'un vin rouge : en France, ce processus n'est autorisé que dans une seule région: la Champagne!</span><br /><span style="color:#000066;"><br />2. la vinification "en blanc" d'une vendange de raisins noirs: on va donc traiter les raisins rouges comme s'ils étaient blancs! On effectue donc généralement un pressurage direct de ces raisins rouges mais en ne prenant pas trop de précautions quant au contact entre les peaux colorantes et le jus. La vinification suit alors le schéma classique des vins blancs, avec basse température de fermentation et mesures drastiques contre l'oxydation. Il s'en suivra une très légère coloration rose. Ces vins sont aussi connus sous le vocable de vins "gris". Ils ont une structure tannique insignifiante et ont des caractères organoleptiques très proches des vins blancs. </span><br /><br /><span style="color:#000066;">3. la vinification "écourtée" en rouge d'une vendange de raisins rouges : ici, on procède comme pour un vin rouge classique, mais lors de la phase de macération des peaux et jus en cuve, on ne les laissera en contact que 24 à 48 heures. On procédera alors à un écoulage des jus ainsi plus ou moins colorés selon les cépages utilisés. Ces rosés sont dès lors souvent appelés rosés de saignée. Effectivement, la palette aromatique m’apparait nettement plus complexe avec une note boisée, épicée, florale, un peu de fruité et une note empyreumatique (arôme de brûlé, de torréfaction) qui me semble dominer.
